Pineapple Coconut Pancake Recipe

When I first met my bestie Amy Black, (fabulous fashion blogger & Instagrammer @amysvintagecloset!) she was managing the cutest little breakfast & lunch spot in La Jolla called Coffee Cup.

Not only was it fun to bop in to visit her at work, but the food was incredible! Amy has since moved back to Phoenix, but I still frequent Coffee Cup for their delicious food!

I was there a few weeks back and noticed Pineapple Coconut Pancakes on the “special of the day menu”. I had just finished a long hike and was really excited about my Avocado Scramble with Bacon, so I didn’t order the pancakes, but I’ve been thinking about them ever since!


  • 1 ¼ cups flour
  • 1 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 large egg
  • 1 cup coconut milk
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter (melted)
  • 1 cup pineapple (diced)
  • ¼ cup shredded coconut
  • 4 oz cream cheese
  • ¼ cup coconut milk
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup pineapple (diced)
