Black-Eyed Pea Salad with Indian Spices

Simple summer salad of earthy and nutty flavored black-eyed peas tossed with a hot, tart and tangy blend of Indian spices

Ingredients

  • 1 cup dried black-eyed peas
  • 1/2 teaspoon turmeric
  • 1 teaspoon sea salt
  • 1 large tomato, partially seeded and diced
  • 4 green onions, trimmed and chopped
  • 1-inch piece fresh ginger, grated or minced
  • 1 tablespoon fresh mint leaves, finely chopped
  • 1 green or red chili, seeded and finely chopped
  • 1/2 teaspoon chat masala
  • juice from 1 lime (2 tablespoons)
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon rock salt (optional)
  • radicchio leaves or mixed greens
