Hello, Lil’ Luna readers!  I’m Melanie from Melanie Makes and I’m thrilled to be joining Kristyn as a contributor this year.  I love to make everyday eats a bit more interesting and that’s exactly what I’ve tried to do with this recipe!

During the week, breakfast at our house is something that is quick and that our children can easily eat before heading out the door to school.  Usually this means something like oatmeal, cereal, muffins, etc.  When it comes to the weekend, I love to make a special treat for us all to sit down and enjoy around the dining room table as we discuss what we’d love to do over the two days we have together.  This Strawberries and Cream Coffee Cake definitely fits the bill!  I love that I can make it ahead on Friday afternoon and when I roll out of bed on Saturday morning, breakfast is ready and waiting for us.

Ingredients

  • 2 8 ounce packages cream cheese, softened
  • ½ cup sugar
  • ½ teaspoon vanilla extract
  • 1 egg
  • 1 cup seedless strawberry jam
  • 3 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, softened
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 cup non-fat plain yogurt
  • ¼ cup sugar
  • ¼ cup flour
  • 3 tablespoons butter
  • ½ cup powdered sugar
  • 1 tablespoon milk
