Red Velvet Valentine Macarons

Impress your Valentine with these Red Velvet Heart Shaped Macarons filled with cream cheese frosting. The melt in your mouth texture make them a perfect treat any time of year.

Ingredients

  • 107 grams egg whites, (I used 3 eggs aged for 3 days in fridge)
  • 70 grams of superfine sugar, sifted
  • 118 grams almond meal, sifted
  • 177 grams powdered sugar, sifted
  • 1.5 tablespoons cocoa powder, sifted
  • ¼ teaspoon vanilla extract
  • 1 teaspoon red food coloring (I used Americolor Food Gel in Super Red)
  • 4 oz cream cheese, cold, cut into cubes
  • ¼ stick of unsalted butter, softened
  • 1½ cups of powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • ½ teaspoon of lemon juice
  • pinch of salt
  • 1-3 teaspoons of whole milk (optional depending on consistency desired)
