Ingredients

  • 1 teaspoon olive oil, or light tasting oil of your choice
  • 1 large yellow onion, chopped
  • 1 heaping tablespoon dried mushrooms
  • 1 ½ cups vegetable broth
  • 1 ½ teaspoons cumin
  • 1 tablespoon chili powder
  • 1 large red pepper, chopped
  • 1 (14.5 ounce) can petite diced tomatoes, drained
  • 1 can (15 ounce) chili beans in sauce, undrained
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (4 ounce) can diced green chiles
  • 1/3 cup frozen corn
  • 1 tablespoon red miso paste
  • 1 recipe buttermilk biscuits (recipe follows)

Ingredients

  • 1 cup all-purpose flour
  • 1 cup cake flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon granulated sugar
  • ½ teaspoon fine grain salt
  • 4 tablespoons (½ stick) chilled unsalted butter, cut into cubes
  • ¾ cup plus 2 tablespoons buttermilk
