This Southwestern Summer Pasta made a perfect dinner and a perfect lunch for the next day! It has just the right amount of smokiness from the chipotle paste, crunchiness from the veggies, and overall yummyness! #vegetarian #pasta #southwestern

Ingredients

  • ¼ cup freshly squeezed lime juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon taco seasoning
  • 1-2 teaspoons chipotle paste
  • ½ cup fresh cilantro, chopped
  • ½ teaspoon Kosher salt
  • ½ teaspoon fresh ground black pepper
  • ½ tablespoon plus 1 teaspoon olive oil, divided use
  • 1 medium red onion, diced
  • 1 zucchini, chopped
  • 1 cup frozen corn, thawed
  • 1 red pepper, diced
  • 1 can black beans, drained and rinsed
  • 8 ounces small pasta, uncooked
