Roasted Red Pepper Soup with Chorizo & Mint Pesto

Winter has well and truly set in here with temperatures some mornings being as low as -2c! My poor little bean plants which were only put in two weeks ago have literally frozen to death.  Although most days the sun does make an appearance to cheer the soul a bit, yesterday just wasn’t one of those days, with constant rain and only a high of 7c. Soup and homemade bread was definitely on the agenda. As luck would have it, my local vegetable shop had a glut of capsicums this week going out cheap and as soon as I saw them, I knew exactly what I was going to use them for. This recipe is really delicious and so simple to make with the addition of the mint pesto giving it a little kick of freshness, although this is purely optional, as is the chorizo if you want the vegetarian option. Roasted Red Pepper Soup with Chorizo & Mint Pesto

Ingredients

  • Inspired from here and reinvented
  • 4 small red capsicums
  • 4 medium tomatoes
  • 2 tspns olive oil
  • 1 chorizo sausage, roughly chopped
  • 2 golden shallots, chopped
  • 2 garlic cloves, chopped
  • 1 tspn smoked paprika
  • 5 cups chicken stock
  • 2 tblspns red wine vinegar
  • 2 tblspns almond meal
  • Pesto:
  • ¼ cup mint
  • ¼ cup parsley
  • ½ tblspn grated parmesan
  • ½ tblspn pine nuts
  • 2 tspns lemon juice
  • 2 tblspns olive oil (may need a bit more)
