An easy mixed vegetable quinoa salad with quinoa, avocados, carrots, fresh herbs and a lemony vinaigrette dressing! Healthy, delicious and so filling!

This is the recipe that I’ve been eating for the last week and a half to keep myself eating something of nutritional value that actually tastes good to my mouth during this crazy End-of-February season.

For those of us who love fresh Mediterranean flavors, the recipe/concept is salty and slightly acidic and bright and fresh, just like any good quinoa salad bowl situation should be. FEEL THE RAINBOW. TASTE THE RAINBOW.

This filling rainbow bowl is a mish-mash of quinoa, cucumbers, feta cheese, cucumbers, carrots, and radishes. Also red onion, hummus if you like, and fresh dill or any other herbs, really.

Plus we’re adding a drizzle of lemon vinaigrette which is basically EVERYTHING in my life right now. So much flavor, it’s crazy.

This salad is perfect for a yummy packed lunch or a light dinner. It’s perfect for the workweek because it can be made ahead of time and taken for lunch throughout the week.

Ingredients

  • 12 cups water
  • 1 1/2 cups quinoa, rinsed
  • 3 cucumbers, peeled, ends trimmed, and cut into 1/4-inch cubes
  • 1 small red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 1 cup red radishes, diced
  • 1 cup carrots, diced
  • 1 bunch Italian parsley leaves, chopped
  • 2 bunches mint leaves, chopped
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 lemon, juiced
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon freshly ground black pepper
  • 1/2 cup crumbled feta, for serving
  • 1 avocado, peeled, seeded and diced, for garnish
