It’s so casual and easy, but that doesn’t mean it has to be boring. My Tomato Feta Pasta Salad is quick to make – just a handful of ingredients – and full of flavor! What you don’t have on hand, you can easily pick up at the grocery store.
This year, I planted tons of herbs, and my Greek oregano is flourishing. I wanted to make a pasta salad with some of it, and knew feta was the perfect accompaniment. Think of it as a Greek-inspired pasta salad! It was a big hit with Mr. Juggling Act, our resident salad-lover.
- 1 lb pasta shells
- 2 pints grape tomatoes
- 1/4 cup white wine vinegar
- 6 tablespoons extra virgin olive oil
- 1/2 lb crumbled garlic and herb feta cheese
- 1/4 cup chopped fresh Oregano leaves
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
