Crunchy Lemonade Chicken Tenders

Here comes the bright flavors of summer with this healthier version of lemon chicken.  Not only for adults but for kids too!  Serve with a low fat ranch or a squeeze of fresh lemon.

Mix together 1 tablespoon of lemon zest, lemon juice, 1 cup water, sugar and milk.  Whisk until sugar is dissolved.

Season chicken tenders with salt and pepper.  Toss in marinade.  Marinade no longer then 2 hours or the lemon juice will begin to break down the chicken.

Preheat oven to 400 degrees.  Bring chicken to room temperature.  Put the panko, thyme, the remaining 1 tablespoon of lemon zest 1 teaspoon salt and pepper in a large resealable plastic bag and shake to mix.
