Yonanas - Raw Ice Cream Sandwiches

Ummm….so if you follow me on Instagram, you may have seen how excited I was to get my Yonanas machine in the mail a couple weeks ago!

If you don’t already know, Yonanas is the must-have kitchen gadget of the Summer. I mean it- people are crazy for Yonanas! It is basically a machine that turns any frozen fruit into delicious soft-serve ‘ice cream’! I’ve tried so many flavours already, though I always use a base of banana. Blueberries, strawberries, raspberries, pineapple, and mango have all come out tasting amazing. You can also do a cookies and cream flavour by putting sandwich cookies through the Yonanas machine. I have been trying to restrain myself from that one, but we will see how much longer I can resist….

I wanted to come up with a fun Summer recipe to celebrate Canada Day on July 1, using the Yonanas machine. I think these raw ice cream sandwiches are perfect- they are actually healthy, they are red and white, and taste awesome!!

Ingredients

  • The raw cookies are gluten-free and are made from a base of almonds, buckwheat, and coconut. They are flavoured with a little maple syrup and lemon zest and juice. Then, you sandwich a big scoop of Yonanas strawberry-banana soft-serve in between two cookies and BOOM! Healthy, gluten-free, dairy-free, super awesome red and white Canada Day treats!
  • Raw Ice Cream Sandwiches
  • Cookies: (makes 18 cookies – 9 sandwiches)
  • 1/2 cup buckwheat groats
  • 1/2 almonds
  • 1 cup finely shredded coconut
  • 1/2 tsp vanilla powder
  • 3 Tbsp ground flaxseeds
  • 9 Tbsp water
  • 3 Tbsp maple syrup
  • zest and juice of 1 lemon
