My oldest daughter Ocean, is in the hospital. Since she is hopefully on the mend, I thought I would take her some home-made soup. I made this "root vegetable soup" to compensate for the yucky hospital food.br /br /Picked up a bag of stewing vegetables at the grocery store yesterday. It's just handy and pretty inexpensive. I also grabbed a can of kidney beans, and whipped this together this morning.br /br /div class="separator" style="clear: both; text-align: center;"a href="http://3.bp.blogspot.com/-PzulnzWNx4I/UPgY6GaB3QI/AAAAAAAADU8/uGTT-nff5rU/s1600/root+vegetable+soup+1.jpg" style="margin-left: 1em; margin-right: 1em;"img border="0" height="266" src="http://3.bp.blogspot.com/-PzulnzWNx4I/UPgY6GaB3QI/AAAAAAAADU8/uGTT-nff5rU/s400/root+vegetable+soup+1.jpg" width="400" //a/divbr /br /bRoot vegetable soup/bbr /br /2 tbsp sunflower oilbr /1 onion-small dicedbr /1 clove of garlic- mincedbr /2 carrots- peeled and sliced thickbr /1 potato- peeled and cubedbr /1 turnip- peeled and slicedbr /1 small rutabaga- peeled and cubedbr /5 cups waterbr /1/4 cup ricebr /1 can of kidney beans- rinsedbr /1 Tbsp balsamic vinegarbr /a few leafs of kale- choppedbr /dried oreganobr /sea saltbr /freshly ground pepperbr /br /In a large pot, gently heat oil, add onions and garlic. Sauté until soft.br /Add veggies and continue to sauté for 4-5 minutes.br /Add water and rice.br /Bring to a boil. Turn down to simmer.br /Add beans. Season with vinegar, oregano and salt and pepperbr /Stir in kale once ready to serve.br /br /div class="separator" style="clear: both; text-align: center;"/divbr /br /br /br /br /br /br /br /
