{Gluten Free} Churro Waffles with Chocolate, Strawberry & Caramel Dipping Sauces

For my 30th birthday two months ago, my mother-in-law gave me my first ever waffle iron. It’s a gorgeous black/chrome, double-decker machine that lets me make two belgium waffles at a time. Twice the deliciousness in half the time!

I’m afraid she’s created a bit of a monster, because having this thing in our kitchen makes us want to have waffles ALL THE TIME. In the short time that we’ve had the waffle maker, we’ve devoured stacks upon stacks of blueberry waffles, plain buttermilk waffles, banana chocolate-chip waffles…and best of all: churro waffles!

Ingredients

  • 4 tbsp butter
  • ¼ tsp kosher salt
  • 1-1/4 cups gluten free flour (I used Pamela's pancake and waffle mix)
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • 4 eggs, beaten
  • ½ cup granulated sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp butter, melted
  • ½ cup semisweet chocolate chips
  • 1 cup strawberries, sliced and hulled
  • ½ cup granulated sugar
  • 1 tbsp lemon juice
  • ½ cup butter
  • 1 cup brown sugar
  • ½ cup heavy cream
  • ½ tsp salt
