Lemon and Orange Cake with Lemon Honey Icing

Lemon and Orange Cake with Lemon Honey Icing

This cake is wonderful. My husband was in the mood for something sweet and I wasn’t sure what to make, I was thinking something chocolate, like brownies but I had no chocolate on hand so I decided to make this wonderful lemon and orange cake. It turned out gorgeous and absolutely delicious.

Preheat oven to 350 degrees and butter and flour a round cake pan. In a medium bowl, sift together the flour, baking powder, baking soda and salt. Add the orange and lemon zest and mix well. Set aside. In the bowl of your electric mixer, use the paddle attachment and combine the butter and sugar together and mix for 2 to 3 minutes until light and fluffy. In a small bowl combine the lemon juice, orange juice and milk and stir well. Set aside. Add the eggs one at a time to the butter/sugar mixture and mix well Scrape the sides of the bowl as necessary. Begin adding the flour mixture a little bit at a time and alternating with the lemon/orange/milk mixture until finished. Mix batter well. Pour the batter into the greased pan and bake for 50 min to an hour until done. Check the center of the cake with a toothpick and if it comes out clean it's done. To make the lemon honey icing mix all the ingredients together in the bowl of a mixer for about 5 minutes. The icing should be light and fluffy. Let cake cool on a wire rack and once cool you can either sprinkle with powdered sugar or spread the lemon honey icing.
