Vegan Pumpkin Pear Almond Muffins

Vegan pumpkin pear almond muffins are a fall treat! Tender moist pumpkin muffins are packed with sauteed spiced pears, crunchy almonds and wholesome oats.

Ingredients

  • 1 flax egg (1 tablespoon ground flaxseed plus 3 tablespoons water)
  • 1 tablespoon coconut oil or non-dairy butter
  • 2 Bartlett pears, peeled, cored and diced into ¼-inch cubes (about 2 cups)
  • 1 ¼ teaspoon ground cinnamon, divided
  • ⅛ teaspoon nutmeg
  • ¾ cup pumpkin puree
  • 1 cup unsweetened almond milk
  • ½ cup dark brown sugar, packed
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1 ½ cup all-purpose flour or gluten-free flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ⅓ cup old fashioned oats, plus more for topping
  • ⅓ cup sliced almonds, plus more for topping
