I first saw these over on The Londoner and, just like so many millions of people in the world, was completely fascinated. First by the name (which totally made me wince), then by the recipe. They have been around for 5 years now and I have to admit, the idea of this recipe has really grown on me.

Ingredients

  • 1/4 cup vegetable oil
  • 3/4 cups white sugar
  • 1 teaspoon McCormick® vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup zucchini, finely grated and drained
  • 1/2 cup butter, room temperature
  • 1 cup granulated sugar
  • 1 egg, beaten
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 cup zucchini, finely grated and drained
  • 1 cup semi-sweet chocolate chips
  • 16 Oreos (or as many as you need to fit your pan)
