These lettuce cups are seriously one of my favorite ways to enjoy chicken salad. They’re low in carbs, high in protein and perfect for a light, fresh lunch or weeknight dinner!

I didn’t have any leftover chicken on-hand, so I pan-fried about a pound of raw chicken tenders, but you could totally use a rotisserie chicken from the store making this salad completely no-cook and perfect for those warm summer days.
