Paleo Sweet Potato Hash Breakfast Bowl

This Paleo Sweet Potato Hash Breakfast Bowl a.k.a. My Favorite Whole30 Breakfast has only 5 ingredients, but is loaded with flavor! Easy, delicious, and healthy! Whole30, gluten free, dairy free, and a great way to start the day!

The Whole30 recipe testing has begun!! I have tossed around the idea of completing a Whole30 from time to time, but I kind of just sporadically decided to take the plunge on June 4th. Honestly, my sugar cravings were out of control and although I was eating healthy main meals; I was also eating way too many sweets. Most of these were supposedly healthier sweet treats – Halo Top, Lenny and Larry protein cookies, and so on.

I’ve managed to stick to the Whole30 for 8 complete days. For someone that eats a fairly healthy diet, most days, with a few too many splurges here and there, as of late, this way of eating hasn’t been that difficult. Yes, I DO miss my protein waffles. I also REALLY miss stevia in my coffee and tea, but other than that it’s been smooth sailing.

Finding meals that I loved before the Whole30 and converting them to Whole30 compliant has been the best. I found this recipe, already on my blog, was easily Whole30 compliant. With just a switch of bacon types, I easily made this recipe work. Most bacon contains added sugar and on Whole30, that’s a big no-no. I was able to find one of the few compliant brands, Pederson’s Farms at my local Whole Foods. Plus, adding real bacon instead of turkey bacon tastes better too!

Some other Whole30 compliant products I’ve been loving are ghee and fun Trader Joe’s seasonings. Not only are the ghee and seasonings so tasty with this hash, but these products are awesome with many other recipes too. I literally put the seasonings on everything from salads to roasted veggies to chicken.

This would make the perfect lazy weekend breakfast or brunch. If you’re vegetarian, simply leave the bacon out. There’s plenty of yumminess going on, you won’t even miss it!
