Now, I’m well aware that I’m not the first to post the two ingredient pancake and there are tons of recipe ideas for the two ingredient pancake floating around the blogosphere. However, since this is one of my favorite pancake recipes…. heck, one of my very favorite breakfast meals, I have to share my version with you. It just might be the best one yet!
Eggs and a banana…. that’s all! Two of my favorite foods come together to create a simple, yet, scrumptious pancake. It’s hard to believe that you don’t need flour, milk or oil to create a lovely, light and kid-approved pancake. Although delightful, don’t be expecting your run-of-the-mill carb-filled pancake. These have more of an eggy crepe-like texture, that is equally appealing. If you’re used to eating clean healthful foods; you will most likely LOVE these. To make the entire plate of pancakes that you see in the picture; I used 2 eggs, 1 banana, 1/8 teaspoon baking powder, 1/4 teaspoon cinnamon and 2 tablespoons PB2. That was it, to make this plate of 8 nicely sized pancakes.
