What I Ate Wednesday: Getting the Greens in!

Hello, friends! Hope everyone’s week is going marvelously! This week must be going by fast because it seems like just yesterday I was writing my last What I Ate Wednesday post and sharing my recent eats. This one’s all about getting in the greens because I’ve been making a conscious effort to make sure and get plenty of green veggies at every meal or almost every meal.

Breakfast is no exception. If you think a little outside the box, you can easily create a lean, mean, green breakfast meal to get your day started on the right track. I’ve been bringing the green smoothies back here and there, now that it’s not so frigid in the morning. On Saturday morning, I had one of my go-to mushroom spinach omelets. The perfect fuel for a long run and Body Pump! I’m really excited about the green oats, that you see here. Oatmeal is my very favorite breakfast, but seeing how I’m trying to up the greens at every meal; I decided to experiment with a mix between hot oats and a green smoothie. It turned out so good, guys!! I cannot wait to share the recipe with you…. maybe this weekend!!
