Green Monster Froyo - Kim's Cravings

I’m completely obsessed with this recipe… that’s just all there is to it! I’ve had this Green Monster Froyo for lunch several days in a row. It would actually make a great dessert; but in this Texas heat, when lunch time rolls around, all I want is something cool and refreshing. The best news is, there is no ice cream machine required to enjoy fabulous “ice cream”. If you have a food processor or blender, you’re in business!

This recipe will work in any food processor or blender, as I’ve made it many times before. Honestly though, using the Vitamix really thickens it up and gives it the perfect ice cream texture. Just like in a green smoothie, you’ll never know there is spinach or cucumber in this. The color kind of gives it away, though! I use super ripe bananas, which helps to naturally sweeten the froyo. I didn’t need any additional sweetener in mine. I’ve also tried swapping out the protein powder for 2 tbsp. of peanut flour {PB2} and it was a great swap. If you don’t have a frozen cucumber, don’t worry…. you can use one that is unfrozen or just leave it out all together.
