Lately have I been all about pistachios. The color and taste is amazing and make everything a bit more fancy. I have always loved to garnish with pistachios on top of desserts, starters etc but the past weeks I´ve put pistachios in everything. For instance pistachio pesto, pistachio mousse, pistachio ganache, pistachio ice cream…you name it! This recipe of Pistachio Cupcakes is one of my late cravings and they are so fluffy and moist. Sure to please. Easy and quick to make, too!

225 g Butter 8 oz

2 1/2 dl Sugar 1 cup

3 Eggs

1 dl rice flour 1/2 cup

1/2 dl Buckwheat Flour 1/4 cup

1 pinch Vanilla Powder

zest from 1 lemon

Frosting

200 g Powdered Sugar 7 oz

75 g Butter, room temperatured 3 oz

30 g Cocoa 1 oz

150 g Cream Cheese 6 oz
