Now in late August we have a tradition in Sweden to organize Crayfish Parties, were we eat lots of crayfish and drink together. The crayfishes are boiled in salt water and seasoned with fresh dill, then served cold and eaten with one’s fingers. We usually serve the shellfish with bread, different cold sauces and cheese pie. This recipe of Pie with Chanterelles and Cheese is a perfect version of pie to serve on a crayfish party, and gluten free of course. You can serve it either warm or cold.

I found the recipe of the crust here from a Swedish blogger called 56 Kilo. If you don´t want a gluten free pie you can just use the instructions for the filling and make your own crust.

3 dl Almond Flour 1 1/4 cups

1/2 dl Sesame Seeds 1/4 cup

1 tablespoon Psyllium Husk

1 teaspoon Salt

40 g Butter 2 oz

1 Egg

Filling

500 g Chanterelles 1 Ib, or other mushroom

1 Onion

150 g grated Cheese 5 oz

3 Eggs

2 dl Double Cream 1 cup

1 dl Milk 1/2 cup

salt and pepper
