Hello peeps!

If you enjoyed yesterday’s green extravaganza post (FYI: it’s pesto pasta and it’s very, very delish), I’ve got something that you’re going to adore as well – a sweet breakfast post full of goodness – matcha mint protein pancakes!

They’re soft, they’re fluffy and they’re wholesome to boot, packed with The Good Guru protein powder and some matcha powder to get all those anti-oxidants. How good does that sound? I personally love enjoying pancakes and other sweet goodies for breakfast, but given how busy my mornings are – with working out and going to work – you bet I need a filling breakfast which keeps me satisfied for hours. You know, so hangry me doesn’t attack her poor clients haha.

Ingredients

  • 1 cup (125g) spelt flour
  • 1/4 cup (30g) The Good Guru protein powder
  • 1 + 1/2 tbsp. matcha powder
  • 1/4 tsp. baking powder
  • 1/4 cup (55g) coconut sugar
  • 3/4 cup (180g) coconut milk
  • 1 flax egg
  • 1 drop peppermint extract
  • 1 drop vanilla extract
