Makes approximately 15 eclairs. Eclairs keep well in the refrigerator. You can make the custard up to two days in advance, stored in the refrigerator.

Ingredients

  • 1 ¼ cups Whole Milk
  • ½ cup Sugar
  • 3 tablespoons All-Purpose Flour
  • 3 Egg Yolks
  • ½ Vanilla Bean Pod, split lengthwise
  • 1 tablespoon Butter
  • ½ cup Water
  • ½ cup Whole Milk
  • ½ cup Butter, room temperature
  • 2 teaspoons Sugar
  • ½ teaspoon Salt
  • 1 cup All-Purpose Flour
  • 4 Eggs, whisked lightly
  • ¾ cup Powdered Sugar
  • 2 tablespoons Unsweetened Cocoa Powder
  • 1 ½ tablespoons Whole Milk
  • 1 teaspoon Vanilla Extract
