My Coconut-Rum Grilled Shrimp recipe is an easy summer dinner that only needs 5 ingredients!

It seems crazy to say this, but during the month of July, we only grilled twice. Two times. Dos.
Of course, we were gone for a week in July while we enjoyed the geeky craziness of San Diego Comic-Con, but still…it’s very strange to think back on the month and realize we only used our grill twice during one of the biggest grilling months of the year.
- 1 can coconut milk (13.5 ounces)
- ½ cup light brown sugar, packed
- ¼ cup spiced rum (can use non-spiced rum, if you prefer)
- 2 tablespoons lime juice
- 2 pounds large shrimp, peeled and deveined
