Ingredients

  • 5 cardamom pods
  • 1 tsp. cumin seeds
  • 1/2 tsp. whole cloves
  • 1 tsp. black mustard seeds
  • 1 tsp. mixed peppercorns
  • 2 cinnamon sticks
  • 2 lbs. squash, peeled if not organic, and diced
  • 1 large onion, peeled and diced
  • 1 cup raisins or dried cranberries
  • 1/2 cup crystallized ginger, minced
  • 1 cup packed brown sugar
  • 1 1/4 cup apple cider vinegar
  • 3/4 cup water, plus more if needed
  • 1/4 tsp. fine sea salt
  • 1/2 tsp. ground tumeric
  • 1/2 tsp. ground cinnamon
  • 1 dried Thai chile or other hot chile pepper, crushed (or one or more pinches of red pepper flakes) -- optional
