When I want a quick-and-easy lunch option, I often turn to the sandwich. Let’s face it: I often need our lunches to be quick and easy. Sometimes we are out and about during the morning and I get home with only a few minutes to throw together a healthy lunch. I try not to get too dependent on Meghan’s favorite sandwich, the standard peanut butter and jelly.
