p  I’m a huge fan of simple meals like this Chickpea Stir-Fry with Black Bean Sauce. I love meals that come together quickly and pack a punch in the flavor department. The black bean sauce ads a serious savory punch that takes this simple veggie stir-fry from “meh” to marvelous. It makes great leftovers too!     One of my favorite weeknight meal strategies is to keep a double batch of brown rice and some yummy sauce options in the fridge.  Having pre-cooked rice is a great incentive to eat your healthy whole grains, instead of reaching for some quick easy carbs instead. Toss some sauce with cooked veggies, and you’re good to go. It’s a smart way to make healthy choices easier to make.  I’m not saying that it will make the garlic toast look less delicious….because that would be a lie. Baby steps.    I’ve been making a concentrated effort to include more alternative protein choices in my diet.  Not only does it force me to get creative with meal preparation, but it’s so much cheaper! Chickpeas are one of my favorite alternative choices. They’re creamy, delicious and hold up really well to heavier sauces like curry. They’re a main staple in my pantry.     I loved this one, and so did Ovi! It was super filling, tasty and gets extra bonus points for nutrition.   PS: I’m excited to share some great new blog features with you! HGT has undergone a huge face lift.
