St. Patrick's Day Cupcakes with Cream "Cheese" Frosting

Green cupcakes without any artificial colouring. Your first thought might be “yay!”. When I tell you that the beautiful green colour comes from spinach I expect your glee will turn to horror. I know I know, it sounds disgusting and just gross to put spinach in a dessert but please follow me on this one. As you might remember from my Black Bean Brownie recipe, I love putting weird things in desserts to boost the nutritional value without sacrificing the taste. The idea behind this is, yet again, credited to one of my followers on Facebook, in this case Cynthia Bai who sent me a very intriguing recipe.  Seriously, I cannot thank you all enough for continually sending me various pictures and recipes you want to be done in a healthy, vegan and gluten-free manner. Ingredients

  • 2 cups dates, pitted
  • 1 cup buckwheat flour
  • 1 cup certified gluten-free oat flour
  • 1 cup pureed spinach (about 8 cups fresh leaf spinach + 2-10 tbsp water)
  • 1/2 cup unsweetened plant-based milk
  • 1 tsp vanilla essence
  • juice and zest from 1 lemon
  • a pinch of maldon salt
