I make grain-based hot cereals for my kids most mornings through the fall and winter. One evening I had the inspiration to combine some grains into a hot cereal, and then mung beans popped to mind as a nice addition. Mung beans have a fairly neutral flavor, cook more quickly than a lot of other legumes and they contribute nice texture and nutrition to this porridge.
I just love calling this “porridge”. It just feels so wholesome- and I love hearing the kids say, “Yay- porridge!” when they figure out what I’ve prepared for breakfast.
