We love cucumbers- well, all of us except for my husband- he says they taste “too fresh” (whatever that means?!). In any case, they’re a wonderful summer veggie and have a natural cooling effect on the body. They’re exceptionally good for your skin too (topically and when consumed).
One of my all-time favorite foods is a simple cucumber sandwich- bread, mayo and sliced cukes. But since we don’t eat much bread around here, this cucumber salad is a wonderful alternative. You can make it with a store-bought vegan mayo (look for those made with expeller-pressed oils as the best alternatives) or you can prepare my almond mayonnaise (also posted on this blog) as an even healthier option. Either way, this recipe is quick, easy and tasty!
