It’s picnic and barbeque season, so it’s great to have a simple wholesome coleslaw recipe.
This recipe features my homemade almond mayonnaise (posted a month or so ago) but you can substitute any wholesome mayonnaise. What makes a mayonnaise wholesome? The major ingredient in mayonnaise is oil, so it’s best to purchase mayonnaise made with expeller pressed oil. And it’s ideal if that oil comes from a plant or seed that you would actually consume (sunflower versus cottonseed, for instance). If you don’t do well with eggs or prefer to keep them out of your diet, you can also find egg-free mayonnaise. It takes an extra step or two, but if you can prepare my almond mayonnaise for this recipe you’re assured of only good wholesome ingredients in your mayo!
