This is one of the tastiest grain salads I’ve ever made. My 12 year old son says he could live on it. It’s really well-rounded in nutrients, so he might very well be able to!
This recipe makes a large batch- which is great for taking to a party or potluck, or for keeping on hand in the refrigerator for some quick and easy lunches. You may notice some brown specks in the picture (besides the black beans, of course). This is because I made this current batch with a mix of white and red quinoa.
