Ingredients

  • 1½ cups ripe bananas, mashed (3 to 5, depending on size)
  • 3 whole large eggs
  • ¾ cup granulated sugar
  • ¾ cup olive oil
  • 2 tsp pure vanilla extract
  • ½ cup quinoa flour
  • ½ cup brown rice flour
  • ½ cup almond meal (see below)
  • 3 Tbsp tapioca starch
  • ½ tsp fine sea salt
  • ½ tsp baking soda
  • ¼ tsp ground cinnamon
  • ½ cup finely chopped pecans
  • ¾ cup finely grated carrots
