Ingredients

  • 1 pound dried chickpeas, soaked overnight and drained
  • 1 tsp dried rosemary, crumbled
  • 1 Tbsp sliced dried garlic (or 3 cloves thinly sliced)
  • 1 bay leaf
  • 1/4 cup extra virgin olive oil
  • 14.5 ounce can organic diced tomatoes
  • 1 cup organic carrots, peeled and sliced into ¼-inch rounds
  • 1 cup organic celery, diced
  • 1 medium sweet onion, peeled and diced
  • 1/4 tsp kosher salt
  • ¼ teaspoon black pepper
