We recently received a set of cookbooks to review - 4 of them actually! One way to keep me busy I suppose....perusing new cookbooks keeps me out of trouble and in the kitchen. The Everything Medite...

Ingredients

  • 2 cups dry lentils (1 lb)
  • 1 medium-sized onion, finely chopped
  • 1 large carrot, peeled and grated
  • 4 whole garlic cloves
  • 1 cup minced and sieved tomatoes (fresh or canned – my note here: buy a 14.5 ounce can of diced and drain in a mesh strainer)
  • 1 tsp dried rosemary
  • 2 bay leaves
  • ½ cup extra virgin olive oil
