French Green Lentil, Brown Rice, Tomato and Feta Salad

  • 1 cup French green lentils (uncooked, rinsed)
  • 2 (rice) cups brown rice (uncooked)
  • 1/2 large yellow onion, diced small
  • 1 clove garlic, minced
  • 2 cups chicken stock or vegetable stock
  • 1 Tbsp olive oil
  • 2 stalks celery, diced small
  • 1/2 bunch fresh Italian (flat leaf) parsley, destemed and chopped
  • 1/2 red (or yellow) bell pepper
  • 1 cup diced tomato
  • 3 oz feta cheese, crumbled
  • 2 oz extra virgin olive oil
  • 1 oz white wine vinegar
  • salt and pepper
