Turkey Enchiladas with Homemade White Sauce

Turkey Enchiladas with Homemade White Sauce

I'm finally getting around to my last left-over turkey recipe for the year.  We've had so much turkey over the last month we are definitely not having turkey for Christmas.  I've had something similar to this recipe except it was made with chicken. I've wanted to learn how to make it ever since.  After some Internet research, combining other's recipes with my own hunches, I created the following dish. It hit the spot, and I will make this dish again either with leftover turkey or leftover chicken.br /br /div class="separator" style="clear: both; text-align: center;"a href="http://4.bp.blogspot.com/-16CMF7B3HEY/UNVbfNE3uSI/AAAAAAAACl8/hjqgGfKFoDw/s1600/IMG5071.JPG" style="margin-left: 1em; margin-right: 1em;"img border="0" height="480" src="http://4.bp.blogspot.com/-16CMF7B3HEY/UNVbfNE3uSI/AAAAAAAACl8/hjqgGfKFoDw/s640/IMG5071.JPG" width="640" //a/divbr /br /a class="printfriendly" href="http://www.printfriendly.com" style="color: #6D9F00; text-decoration: none;" title="Printer Friendly and PDF"img alt="Print Friendly and PDF" src="http://cdn.printfriendly.com/button-print-gry20.png" style="border: none;" //abr /a class="pin-it-button" href="http://pinterest.com/pin/create/button/?url=http%3A%2F%2Ffoodiejourney.blogspot.com%2F2012%2F12%2Fturkey-enchiladas-with-homemade-white.html&media=http%3A%2F%2F4.bp.blogspot.com%2F-16CMF7B3HEY%2FUNVbfNE3uSI%2FAAAAAAAACl8%2FhjqgGfKFoDw%2Fs640%2FIMG5071.JPG&description=Turkey%20Enchiladas%20with%20Homemade%20White%20Sauce%20-%20great%20use%20for%20left-over%20turkey%20or%20chicken."img border="0" src="//assets.pinterest.com/images/PinExt.png" title="Pin It" //abr /br /bTurkey Enchiladas with Homemade White Sauce/bbr /1 small to medium onion, diced smallbr /3 cups of left-over turkey, diced mediumbr /8 oz a href="http://foodiejourney.blogspot.com/2012/12/oven-roasted-green-chiliies.html" target="blank"oven roasted green chilies/a divided, 2 oz  set aside (or canned equivalent)br /4 cups of homemade turkey stock (made the same way as a href="http://foodiejourney.blogspot.com/2009/03/homemade-chicken-stock-in-crock-pot.html" target="blank"chicken stock/a, or store bought broth - a staple in my pantry) divided, 1/2 cup set asidebr /4 tablespoons of butterbr /4 tablespoons of flour br /3 cups of Monterrey Jack cheese divided, 1 cup set asidebr /1 cup of sour creambr /8 flour tortillas (about 8 to 8 1/2 inches in diameter)br /olive oilbr /saltbr /white pepperbr /fresh chopped cilantro for garnish (optional)br /sour cream for garnish (optional)br /salsa or a href="http://foodiejourney.blogspot.com/2010/04/garden-fresh-pico-de-gallo.html" target="blank"pico de gallo/a for garnish (optional) br /br /1. Stir in 3/4 cup of the 1 cup divided cheese (keeping 1/4 cup set aside) until melted and blended into the sauce.br /br /div class="separator" style="clear: both; text-align: center;"a href="http://2.bp.blogspot.com/-PVzUxu3VS2E/UNVbMFcBjWI/AAAAAAAACk8/svCvw2TaKs/s1600/IMG5049.jpg" style="margin-left: 1em; margin-right: 1em;"img border="0" height="240" src="http://2.bp.blogspot.com/-PVzUxu3VS2E/UNVbMFcBjWI/AAAAAAAACk8/svCvw2TaKs/s320/IMG5049.jpg" width="320" //a/divbr /br /9. Remove the pot from the heat and blend the sauce with an immersion blender.  (I do this to make the sauce kid friendly.  Well, in my case, husband friendly.  I don't think my husband would like "spicy green things" in his sauce).  Plus, the flavor is more evenly distributed.br /br /div class="separator" style="clear: both; text-align: center;"a href="http://3.bp.blogspot.com/-ArkfbQR8274/UNVbQS0woMI/AAAAAAAAClM/mT1ENOREAL8/s1600/IMG5053.jpg" style="margin-left: 1em; margin-right: 1em;"img border="0" height="240" src="http://3.bp.blogspot.com/-ArkfbQR8274/UNVbQS0woMI/AAAAAAAAClM/mT1ENOREAL8/s320/IMG5053.jpg" width="320" //a/divbr /10. Remove the pot from the heat and stir in 1 cup of sour cream.  This has a cooling effect against the spicy green chilies.br /br /div class="separator" style="clear: both; text-align: center;"a href="http://4.bp.blogspot.com/-QJ59e0i5aUA/UNVbTMh91VI/AAAAAAAAClU/BBkOLIBdMqo/s1600/IMG5055.JPG" style="margin-left: 1em; margin-right: 1em;"img border="0" height="240" src="http://4.bp.blogspot.com/-QJ59e0i5aUA/UNVbTMh91VI/AAAAAAAAClU/BBkOLIBdMqo/s320/IMG5055.JPG" width="320" //a/divbr /br /11. Add salt and white pepper to the sauce.  Have a taste and adjust seasoning as needed.br /br /12. Add 1/2 cup of sauce to the bottom of a 9 x 13 pan.  Assemble 8 enchiladas by dividing the turkey mixture and 2 cups of cheese evenly between the tortillas.  Add the turkey mixture to the center of the tortilla and top with cheese. Tuck each side of the tortilla around the mixture and place the enchilada seam side down.br /br /div class="separator" style="clear: both; text-align: center;"a href="http://3.bp.blogspot.com/-KFvlmYNVmH8/UNVbONZASgI/AAAAAAAAClE/yuaL5PpnsJo/s1600/IMG5051.jpg" style="margin-left: 1em; margin-right: 1em;"img border="0" height="240" src="http://3.bp.blogspot.com/-KFvlmYNVmH8/UNVbONZASgI/AAAAAAAAClE/yuaL5PpnsJo/s320/IMG5051.jpg" width="320" //a/divbr /br /13.
