Italian Meatball Burgers + A Giveaway!

If you'd like to make the same salad and dressing as I did it's easy. To make the dressing combine 1/4 cup fresh basil (about 1 1/4 oz), 2 1/2 Tbsp balsamic vinegar, 2 Tbsp water, 1 Tbsp honey, 1/2 Tbsp olive oil, 1/2 tsp onion powder, 1/4 tsp garlic powder and freshly ground pepper. Blend together in a food processor or blender until well combined. Toss this with 3 - 4 oz baby spinach and some thinly sliced red onion and roasted red pepper to make 4 servings of salad.

Ingredients

  • 8 oz chicken or turkey Italian sausage (about 2), casings removed
  • 4 oz pork Italian sausage (sweet or hot, your preference) casing removed
  • 1 Tbsp olive oil, divided
  • 4 cloves of garlic, minced
  • 1 small onion, minced
  • 1/4 cup part-skim ricotta
  • 3 Tbsp chopped fresh Italian parsley
  • 3 Tbsp whole wheat panko
  • 1 tsp Italian seasoning
  • ¾ tsp oregano
  • ½ tsp dried basil
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper (can use more if desired – I definitely did)
  • Dash of salt
  • 1 large egg
  • 1 cup pasta sauce (try to get a version under 2g of fat and lower in sodium)
  • 1/3 - ½ cup basil (2 - 3 oz), thinly sliced (depending on how much you like)
  • 1/3 cup (about 1.5 oz) part-skim mozzarella
