Homemade Healthy Nachos: Breakfast Style

You guys. We’re makin’ NACHOS (I hope you read that like donkey says “waffles” in “Shrek.” It’s infinitely funnier that way.)


  • 2 tsp Olive oil
  • 1/2 tsp Cumin powder
  • 1/2 tsp Smoked paprika
  • 1/4 tsp Chili powder
  • 2 Large eggs
  • 1-2 Tbsp water (optional, for fluffier eggs)
  • 2 Strips Turkey Bacon
  • 1 Tbsp Non-fat Plain Greek Yogurt
  • 1 1/2 Tbsp Salsa of choice
  • 1 Small tomato, diced
  • 1/2 a Small avocado, diced
  • Sliced green onion, for garnish
  • Cilantro, for garnish
