Healthy Date Brownies

These brownies were inspired by my earlier recipe for Apple Date Bars . Like those bars, they are sweetened only by the dates and apple juice. There has been no refined sugar added. Made with wheatgerm and flaxseed meal, they are the perfect healthy snack disguised as a tasty treat.

1 cup pitted dates

1 cup unsweetened apple juice

3 tbsp butter

1/3 cup cocoa powder

1 egg

1 tsp vanilla

1/2 cup flour

1/2 cup wheat germ

1 tbsp flaxseed meal

1/2 tsp baking powder

1/2 cup chopped dates

Place the cup of dates and juice in a small saucepan and bring to boil, then simmer uncovered for 10-15 minutes. Mash them up (or blend with a hand mixer) until smooth. Add butter, egg and vanilla.
