Greek Cobb Salad-Family Style

Ingredients

  • For the Marinade and the Vinaigrette:
  • 1 cup Extra-Virgin Olive Oil
  • ½ cup red wine vinegar
  • 2 Tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 - 2 teaspoons sea salt
  • ½ to 1 teaspoon freshly ground black pepper
  • For the salad:
  • 2 large organic free-range chicken breasts, cut in 1 inch pieces
  • 2 heads romaine lettuce, chopped
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, finely diced
  • 2 cups cherry tomatoes, Marzano if available, halved
  • 1 - 2 cups pitted Kalamata olives
  • 1 cup crumbled Feta cheese
