Harvest Time Skillet Cornbread

This skillet cornbread is bursting with garden vegetables and is a perfect accompaniment to an end-of-summer meal. It's gluten-free too!

Ingredients

  • ½ cup butter plus 1 Tbsp. for oiling the pan
  • 1½ cups milk
  • 1½ cups cornmeal
  • 2 Tbsp. coconut palm sugar (or brown sugar)
  • 3 eggs
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup fresh corn kernels
  • 1 cup cherry tomatoes, sliced
  • ½ cup finely chopped sweet bell pepper
  • 1 jalapeno pepper, finely minced
  • ¼ cup thinly sliced red onion
  • ½ cup Manchego cheese (or other cheese of your choice) grated
  • ½ cup feta cheese, cubed
