Greek Avgolemono Soup

Greek Egg-Lemon Soup (Avgolemono) is the Greek version of chicken noodle soup, with the freshness of lemon juice and the creaminess of egg. It's the soup of the gods!

Ingredients

  • 2 boneless, skinless chicken breast halves (about 1 pound)
  • 1 tablespoon kosher salt
  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 medium stalks of celery, halved lengthwise, chopped
  • 5 cups low sodium chicken broth
  • 1/3 cup dried orzo pasta
  • Kosher salt, to taste
  • Juice from 1 1/2 lemons (about 4 tablespoons)
  • 1 egg, separated
  • Fresh chopped parsley for garnish
