Breakfast Enchiladas

Ingredients

  • 2 cups Homemade Enchilada Sauce
  • 1 pound ground breakfast sausage (pork or turkey, mild or spicy)
  • 2 cloves garlic, finely minced
  • 8 eggs
  • 2 tablespoons milk
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons butter
  • 12 corn tortillas
  • 8 ounces (2 cups) grated cheddar and/or Monterrey Jack (or slightly more, if you prefer extra cheese on top)
  • Sour cream
  • Diced avocado
  • Diced tomatoes
  • Fresh cilantro, chopped
