My kids both love family style meals where the food is placed in the centre of the table and they can make up their own plates. These noodle baskets were a huge hit and they are a great vehicle for encouraging children to eat more veggies. I simply present the baskets on a large sharing platter with a range of cut up vegetables and a delicious peanut sauce to accompany them.
I use fresh noodles and mix them with a little soy sauce, egg, sesame oil and spring onion. I then fill muffin trays with the mixture making sure I push the noodles down in the centre and up around the sides to form baskets.
I allow them to cook until they are golden and crunchy around the edges. I find kids love crunchy textures and these fit the bill perfectly.
The vegetables and proteins you serve along side them is up to you. I like to add a range of colours but basically use whatever I have available in the fridge or freezer. I have used raw vegetables here but cooked vegetables work great too. We love this peanut sauce with them but it will work well with a range of sauces to suit taste buds.
