BBQ Chicken Salad with Creamy Dressing |

I love BBQ chicken salads in the summertime. What could possibly be better? The dressing for this recipe comes from Mel’s Kitchen Cafe (one of my favorite foodie bloggers). I used this dressing on my usual BBQ chicken salad and it was out of this world good! Typically I just combine ranch dressing with BBQ sauce but this dressing was way better! I had my niece over for dinner that night and she said that it was the best homemade salad she has ever had. If you want to make a lighter dressing for this salad, use our Cilantro Verde Dressing.

Ingredients

  • 3-4 chicken breasts
  • 1½ c. BBQ sauce, divided
  • 3 hearts of romaine, chopped
  • 1 c. frozen corn, thawed
  • 1 can black beans, drained and rinsed
  • 5-6 green onions, chopped
  • 1 c. shredded cheddar cheese
  • 1-2 c. tortilla chips, crunched up into pieces
  • 1 c. mayonnaise
  • ⅓ c. milk
  • ⅓ c. buttermilk
  • 2 Tbsp. fresh cilantro, finely chopped
  • 1 Tbsp. lime juice
  • 1 tsp. white vinegar
  • 1 tsp. granulated sugar
  • 1 garlic clove, finely minced
  • ½ tsp. salt
  • ⅛ tsp. cayenne pepper
  • ⅛ tsp. black pepper
  • ¼ tsp. ground cumin
  • ¼ to ½ cup BBQ sauce
