I’m so glad many of you liked the look of my Healthy Tuna Noodle Casserole recipe! We’ve been enjoying the leftovers – I had the last of it the other day for lunch while at the UberOffices. I tossed it in a tupperware on top of some greens, and added some canned chickpeas to the mix, to, for a little more volume. Delish!
I also had an unpictured orange to end my meal on a sweet/juicy note. Speaking of juice, btw – how cool is this vending machine that got installed recently at the UberOffices?!
