A golden roasted chicken, is there anything more comforting? Now I hear you think, there are many dishes that are very comforting. Like a big bowl of creamy spaghetti carbonara, a huge mug of hot chocolate milk or your favourite ice cream, topped with cream. It’s hard to choose really. But let’s just say that in my book, roasted chicken is definitely in the top 10 of comfort foods. My Frenchie has an even bigger love for chicken, I think we can safely say he could eat it every single day (and in fact, he often does when I’m not there). So you understand that I can’t make him any happier, than roasting a chicken for sunday lunch, or in this case, some chicken legs. A perfect opportunity to use some of the very spicy chili sauce my friends brought me from their vacation in Portugal (thanks again L&T!) to make a hot chicken piri piri. If you don’t have piri piri sauce on hand, nor friends who recently went to Portugal to bring you back a present, don’t worry. You can substitute it by using red chili (grounded or fresh), some lemon juice and garlic. As long as it’s hot, you’re good! Bon appétit! Chicken Piri Piri   Print 40 mins 45 mins 1 hour 25 mins   Author: Eva in the Kitchen Serves: 2 Ingredients 1,5 tbsp olive oil 2 tsp Piri Piri sauce (OR 1 tsp grounded chili, 1 tbsp lemon juice and 1 clove garlic, chopped) 1 tsp paprika powder Salt & pepper 2 chicken legs 15 cherry tomatoes (of different colours if you can find them) 1 sweet long pepper, cut into pieces Fresh thyme sprigs Instructions Mix the olive oil, the Piri Piri sauce and the spices Put the chicken in a roasting tray and rub it with the mixture Let marinade for 30 minutes Preheat the oven to 220 C/430 F Put the chicken in the oven After 15 minutes, turn down the heat to 200 C/ 390 F Bake for another 15 minutes, then add the tomatoes, pepper and thyme Chicken Piri Piri Bake for another 15 minutes (so 45 minutes of baking in total!) 3.2.2499
